why does their activity decrease when the temp gets too high?!?!

high temps ruin the protien, making it a denatured protien- meaning ruined. It cannot be reversed. The structure of the protien becomes ineffective and will not fit into the proper catalyst.

Enzymes are usually proteins and high temps will break down their structure.
