Lifting those trays is about the same as weight lifting at the gym .
When I was a waitress , I was in the best health of my life .
Eat properly , use a hot tub / jacuzzi after work , to get the muscles to relax , then sleep well .
I suggest only doing it until you get out of college ,
Because just like construction work , it is a young persons job and will take a toll on your spine .
But for a job , for a few years , the tips are great !

Practice, practice, practice.
Bend at the knee to pick up the heavy trays and balance them on your shoulder until you have both the strength and confidence to hold them over your head.
In the movies it looks like everyone carries them over their heads but reality is so very much different.
Don't carry more than you can handle. As you get used to balancing more plates and more weight you can try just a little more but don't try to be super-waitress when you know you aren't ready for it.
Practice with empty plates during slow shifts. Using two plates on top of each other is usually a good way to approximate the weight of a plate with food. It can help even more because the plates move on each other more than food will. You will be able to practice with balance as well as weight.

Please keep in mind that I work as a waitress in a small spaghetti house, but yes the trays and plates are heavy!!! Pre-bus your tables as much as you can, and when carrying large trays, spread your fingers out as much as possible to try to grip the tray. ALWAYS remember to keep your hand in the middle as much as possible. When serving the food, take food off both sides, that way the bulk of the weight stays in the middle of the tray.
