I've changed my alternate email address and I'm having trouble finding where to change the account settings for my aim mail's alternate email address... so that if I forget my password at some point I don't have to find a way to log into a no longer used other email account to recover it.

OK, I tried settings after I log in... tried looking in each of the six categories it lists at that point, none of them list anything about changing my alternate email address.

Click on the word help near the top of your screen.

It is always a good idea to save the information to disc when you first sign on to a new service. That way, you can't get lost.

But. AOL has disabled my prime password do to "suspicious activity" and wants to have me set a new password by them sending an email to my secondary email account they have on file, and that web service no longer exists. I need to change the AOL secondary address without being able to log in to the primary.

log onto aol mail and check what is offered to you under 'settings' which should appear somewhere in the upper right quadrant of the page. (depending on the browser you are using)
