Okay, I have everything (100 woods and 1,000g) I need to create a monster hut, but the man who builds monster huts won't do it because I'm still low on woods!?

Try gathering a little extra, it might require that you have some extra wood in reserve.
I've never had that problem, so I'm not really sure, but I've never had EXACTLY 100 wood when I talked to him anyway.
You have to have the glove that lets you capture monsters before he will make you one.

Is it possible that you may have spent some of your money without noticing?
If you haven't even beaten the first dungeon yet I don't think he'll build one.
If it isn't either of those try to gather a little more of each material and see what happens.
