A New York minute is a very short period of time, sometimes significantly shorter than sixty seconds, and sometimes a form of hyperbole for "perhaps faster than you would believe is possible". The term refers to the common perception that New York City is very busy, with much happening at all hours of the day, and people often in a hurry and likely to be impatient.
Johnny Carson once described a New York Minute as being the time it takes "From the (traffic) lights to turn green, till the guy behind you starts honking his horn". During the late 1980s crime wave, David Letterman defined a New York Minute as the length of time it took to be mugged in New York City.
A New York minute may be compared to the idea of Internet time, and contrasted with that of a country mile.
There is also a song titled 'In A New York Minute' by U.S lyricist Fran Landesman and U.K composer Simon Wallace.
New York minute may refer to any of these articles:
New York minute (time), very short period of time
New York Minute (film)
New York Minute (song), a song by Don Henley

to me it means very fast. New York has this fast paced life
on the web I found the following which makes sense.
New York Minute
A New York minute is an instant. Or as Johnny Carson once said, it's the interval between a Manhattan traffic light turning green and the guy behind you honking his horn.
It appears to have originated in Texas around 1967. It is a reference to the frenzied and hectic pace of New Yorkers' lives. A New Yorker does in an instant what a Texan would take a minute to do.

It means a minute in New York, but for many people, a minute in New York goes by twice as fast as a normal minute, because of the hustle and bustle everywhere, and the cars, and the honking, and the people, and the talking and yelling.

New Yorkers are known to talk fast and do things very fast, so that a minute would go by more quickly in New York.

something fast paced and quick. nyers are kinda impatient, so most dont like waiting for things to happen. they want things to happen fast, so they try to do stuff fast in what they call a minute. its more like 45 sec though
