I have been told that the story comes from a Greek legend, about a woman named Easter who was Zeus's first wife. But she came back, being hatched from a giant egg. On that day rabbits laid colorful eggs.
I can't remember all the crazy details, and don't know the accuracy of this information.
The simple explanation is that this is from an old multi-god religious feast celebrating the return of spring. Its the celebration of the Vernal-Equinox. The bunny and egg are both symbols of fertility. The original holiday is now a corruption of its former self, as the Christian Church replaced it with a celebration of the resurection of Christ.
