Originally red and blue were the colours of Paris. White represented the King, or the monarchy... hence the colours of the French flag. France has inspired other countries throughout the world, which is why they copy the tricolour flag.

"On July 4, 1776, the Continental Congress passed a resolution authorizing a committee to devise a seal for the United States of America. This mission, designed to reflect the Founding Fathers' beliefs, values, and sovereignty of the new Nation, did not become a reality until June 20, 1782. In heraldic devices, such as seals, each element has a specific meaning. Even colors have specific meanings. The colors red, white, and blue did not have meanings for The Stars and Stripes when it was adopted in 1777. However, the colors in the Great Seal did have specific meanings. Charles Thompson, Secretary of the Continental Congress, reporting to Congress on the Seal, stated:
"The colors of the pales (the vertical stripes) are those used in the flag of the United States of America; White signifies purity and innocence, Red, hardiness & valour, and Blue, the color of the Chief (the broad band above the stripes) signifies vigilance, perseverance & justice."
Also this from a book about the flag published in 1977 by the House of Representatives...
"The star is a symbol of the heavens and the divine goal to which man has aspired from time immemorial; the stripe is symbolic of the rays of light emanating from the sun."

The Continental Congress left no record to show why it chose the colors. However, in 1782, the Congress of the Confederation chose these same colors for the Great Seal of the United States and listed their meaning as follows: white to mean purity and innocence, red for valor and hardiness, and blue for vigilance, perseverance, and justice. The Flag
The U.S. flag has undergone many changes since the first official flag of 1777. For the French tricolore the blue is the colour of the Church, the white that of virgins, and the red homage paid to Christian martyrs.

United Kingdom - It is a combination of the St George's flag (England), St Andrews Flag (Scotland) and St Patrick's Flag (Ireland).
Thats just three but they all signify different things and this will be the same for every other country that has adopted these colours.

I'm not sure anyone knows for sure. But as I learned it...
1) Red is for courage and bravery.
2) White is for hope and purity.
3) Blue is for honor and virtue.
Qualities any country would like to have. These colors represent these things in most parts of the world, so it makes sense that so many countries would use them on their flags.

They depend of de country. Here, in Brazil, por instance, the blue colour simbolize the sky.
Red can simbolize, in the some flags, the blood spilled in the battles and same like that.

White is a symbol or purity and red usually is the blood sacrificed in defense of that country.
Blue is a bit more problematic. It could represent the sky (freedom) or the ocean or loyalty (true blue)
