I am using a Mac PC I wish to earase my email address off this computer.?

when I send an email how do I erase all my email address off this computer since it is a work computer. I do not need people to see friends and family emails address.

I hope I understand your question. It sounds like you mean "addresses" of all your contacts, not just your email address. If you use the Apple Mail application to send email, the email addresses are stored in a different application called "AddressBook". Open AddressBook.app which should have an icon in the Dock at the bottom of the screen. Select a name and go to Edit / Delete card. Repeat for each name you want to eliminate.

If you want to get rid of your email account setup, go to your home folder > Library > Preferences. Delete com.apple.mail.plist. Then go to your home folder > Library. Look for a folder called "Mail". You might want to burn it to a CD or DVD to have a copy. Then you can delete it to get rid of email messages that you received or sent or stored as drafts.
