Because favourite is the correct spelling. Favorite, like color and many other words, were changed by Benjamin Franklin who, after the American War of Independence, wanted to create an 'American' language. Problem was that most people in USA spoke English so he changed hundreds of words to an 'American' spelling to show that Americans did, in fact, have their own language. He also introduced the 'drawl' way of speaking that makes Americans speak English in such a unique way.

Don't even get me started on Americas mutilation of our wonderful language . If they were going to change to phonetic spelling then colour would be culer , their spelling makes even less sense than the correct spelling . One of the thinks that really annoys me is the fact that they change Ts to Ds they changed ; Spelt to Spelld Burnt to Burnd Earnt to Earnd Learnt to Learnd Congratulations to Congradulations there are many more . Even more irritating than that is their appalling grammar that sadly is creeping into British youth culture . The say " yeah I do " when they mean " yes I have " they say " if I would 've " when they mean " if I had " they use the word gotten , which hasn't been correct in English for hundreds of years and that's just the tip of the iceIceberg

The use of OU is UK (United Kingdom) standard. The O alone is the U.S norm. Canadians and Brits or those raised around them are more likely to use the U.
Even though we speak the same language, there are small dialectic differences, like a hood or a bonnet, a trunk or a boot. Those differences extend to some matters of spelling . Most dictionaries will give you variants and identify which is preferred where you live.

That is the way British trained speakers of English spell favorite--as "favourite"; also, they spell the words "colour" and "glamourous" with the "u", which we dropped long ago in the U.S.

It's correct British English - the Queen's English. I'm in Canada, so we use these spellings as well - colour, neighbour, etc. We also use doughnut instead of donut.
