I simply don't get it. Gratitude and humility have made me happy no matter what my circumstances, joyful come rain or shine, but for some people close to me, they just seem never satisfied. How am I supposed to deal with that when my patience is running out.... please help?

Some people could have everything and still be unhappy because there missing something in there life, it could be religion, family, values. It could be any number of things. Maybe it would help if they started helping out others maybe than they will see how lucky they are. You can have all the money and all the possessions in the world and still not be satisfied. Maybe you can talk to your friend, take them to a orphanage or a homeless shelter and have them volunteer some of there time to someone who would appreciate just the smallest things in life

You pretty much answered your own question. No matter what, they remain unhappy. You cannot change people, you can only change how you let them affect you. If you have people like this in your life, either tell them you are there for them as a friend when they have a legitimate concern, or find new friends that share your humility and love for life in spite of the curves life sometimes throws us. It is up to you, not them.

some people need misery to function, they cannot believe that happiness can be theirs, without something being wrong, and if it isn't they will create it. It is so frustrating I know, when you love or care for that person it's heartbreaking. Sometimes I listen and other times I address their fears head on. It doesn't seem to matter what I do the person needs to be miserable in order to function. I just keep that rain off MY parade
