Why is it so difficult to pack the last items of your house during a move?

I've been on this for many days and can't get finished can someone please give me some tips or ideas? I'm very stressed out now, I have to move Monday and don't have what I need.

Because you are mentally and Physically exhausted.
Plus you are anxious to get the new place ready.

Focus on getting everything packed at the old house. Get everything done there before you direct your attention to the new house.
Have plenty of boxes and if you have anyone to help you, that would be nice. Leave the cleaning things last, that way you can clean the old house up before you leave.
