We actually have only fragmentary details of the rituals and personnel involved in Egyptian mummification, and those details tend to come from the later periods of ancient Egyptian history, so they may not apply to all Egyptian mummies.
However, from the texts, partial depictions, and other accounts available, it seems that there was a group of people involved in mummification.
There was the cutter, who was the person who made the incision in the body to remove most of the internal organs. This person was of fairly low status because of the ritual impurity associated with the task of cutting open the body.
Embalmers were also involved. These were the people who actually preserved the body and they were actually a particular type of priest. They also had ties to the medical profession.
In addition, there was a supervisor, a scribe who was also a priest who supervised the stages of embalming and the rituals involved, often while wearing a mask of the god Anubis.
Other priests, particularly priests of Osiris, and lector priests in general tended to be involved for rituals and the formal funeral.

The priests of Anubis would do it. After all, he was the god of preserving the body.
