It's a favorite for several reasons:

It is ethnic/American literature from a segment of the population that never had a spot on the traditional "literary cannon".

It is darn good.

It features women...so it pleases feminists and adds to the "feminist literary cannon".....women have traditionally held few spots on the cannon.

It is a brilliant analysis of mother daughter relationships with the added difficulty that the mothers and daughters come from different cultures.

1, cuz a bunch of teachers decided it was.
2, cuz it deals with universal themes, love, motherhood, etc. that are timeless
3, cuz it shows a piece of chinese-american and chinese life that is instructional and sociologically important
4, cuz it's beautifully written.
