Why would they?
Despite having some laws that are preferential to one religion (Judaism), Israel is a secular nation -- they do not require that everyone follow Judaism. And they make at least reasonable accommodation for most other religions.
Israel pretty much only attacks on the defensive -- when someone else attacks them first. I haven't heard of the Dome of the Rock attacking Israel, so why would they attack back?

The Jordanians almost destroyed it during the 67'fighting. In the battle of Jerusalem, which the Israelis, of course, turned out victorious, the Israelis out of respect for all religions in Jerusalem, refused to use tanks and heavy weapons (like howitzers, artillery). The Jordanians, on the other hand, just unloaded their French made howizters all over the Old City. Pity it didn't strike that imposter house of worship, the dome of rock. I bet the Israelis could have blown it up and said that it was done by errant Jordanian mortar fire, I mean lets face it, how good are Arabs at trigonometry or any other kind of science? LOL.
But Israel left it there. I for one belive the Israelis are too godamned nice, even when that mosque was built over the two Temples of Judaism, and that the Jordanians massacred hundreds Jews in the City and desecrated synagogues and churches, and Jewish cemeteries. Had I been there, it would taken only about a couple construction-grade dynamite sticks. Boom.

Probably because they realize that some Muslim folks just might get a little ticked off about that, and cause some additional problems for Israel.
Also, Israel isn't an overtly aggressive country (unless one considers its recent moronic air stike in Syria! Which probably is thanks to pressure from our warmongering and idiotic "president," here is the USA, being the world's greatest busybody, as usual). MOST of the time, it's a live-and-let-live country.
SIDEBAR -- In 2000, I went inside the Dome of the Rock. Which turned out to be very aptly named. Inside, there's this big slab of rock -- like shale or slate -- that one can walk underneath. A person doesn't have to be Muslim to do this, and tourists go through it constantly. The architecture of the building is unique and beautiful. The world would be diminished if it should ever be destroyed. In the same way as would be the case should anything like that happen to St. Basil's Cathedral in Moscow, or the Taj Mahal.

After liberating Jerusalem in 1967, the Israeli leadership gave control of the temple mount to the Jordanian Waqf (the guys who are destroying the precious archeology up there RIGHT NOW), along with giving lots of land back to the Arab aggressor nations in hope the Arabs would welcome these gestures and stop the campaign to destroy Israel.
And, Jews don't want to behave as Arabs do, like here when mobs ransacked and destroyed the Jewish holy site Joseph's Tomb in the biblical city of Shechem:

The jews have no Authority to remove the "Abomination of Desolation spoken of by Daniel the prophet, stand in the holy place, (whoso readeth, let him understand)". Further, the area of the Mount has been termed "Forbidden" to the Jews, and is also called "Haram" in arab which means forbidden. Why? This is so that the Word be accomplished, as it was given to us through John: Rev 11:2 "ut the court which is without the temple leave out, and measure it not; for it is given unto the Gentiles: and the holy city shall they tread under foot forty and two months."
There cannot be another Temple. Jesus Christ IS the Temple, and we will see Him coming in His Day.

Even though Judism is the official religion of Isreal there is still freedom of religion. Not to mention that the Dome of the Rock is the third most holy site of Islam. If you really wanted to start WWIII destroying the Dome of the Rock would do it.

The Aqsa mosque was built 20 years after the Dome of the Rock, which was built in 691-692 by caliph Abd el-Malik. The name "Omar mosque" is therefore false.
In or around 711, about 80 years after Muhammad died, Malik's son, Abd el-Wahd who ruled in 705-715 reconstructed the Christian-Byzantine Church of St. Mary and converted it into a mosque. He left the structure as it was, a typical Byzantine "basilica" structure with a row of pillars on either side of the rectangular "ship" in the centre. All he added was an onion-like dome on top of the building to make it look like a mosque. He then named it El-Aqsa, so it would sound like the one mentioned in the Quran.

Israel has always been very careful to protect the places that are sacred to each religion there.
Unlike under the Arab Palestinian rule when Jews were not allowed to pray at the Wailing Wall, the holiest site in their religion.

It is against Jewish Law.
They hold respect for other religions unlike Muslims who spent a lot of time when they control the Holy Land by covering and destorying Christian sites.
