A lot.
Amsterdam is not a big city, so you can get a good impression of what it is like in a few hours.
Instead of going round by tour bus, Amsterdam has the canal tours, about an hour for the tour of the town, most leave at Centraal station.
Or you can go on one of the many bike tours through town.

If you want one of the most popular ones, (van Gogh, Anne Frank house, Rijksmuseum,) make a booking on-line and you do not have to join the queue. Can safe over an hour each on busy days.
Amsterdam also has many shops, markets, cafes (where you can drink coffee as well as alcoholic drinks,) coffee shops (where they sell coffee as well as additions for tobacco,) and restaurants.
Just wandering around is also fun. Take a map and you will never get really lost.

Be sensible with your things, (like do not show off with an expensive camera slung over one shoulder, and keep you money spread over the different pockets,) and it is rather safe too.

Amsterdam has a lot to do. ^.^
Let's see, I haven't actually stayed there in a few years, but I think I can remember...
- Taking a canal tour
- Bike-riding
- Going to the park (I forgot what it was called. :P)
- Shopping
- Buying candy (XD)
- Eating at restaraunts
- Going to cafes
- Just walking around
- Watching street performers
I don't remember much else, but in Amsterdam, you usually just see something you want to do and do it, not really making a ton of plans. Or at least that's what I did last time I was there... Anyway, have fun! ^.^
EDIT: Ah, I forgot. There are also the Anne Frank House and the Van Gogh museum. ^_^

I went to the nearest coffee shop and smoked my way through 2 grams as thats the least he would sell me. OMG!!!!!!! I was smoking outside as I didn't know it was illegal to do that! I wandered around aimlessly and somehow found the train back to the airport. Go see the girl on the Oudezijds Voorburgwal too. Highly recommended!!!!

If I were you, I' d go to the best coffeeshop of Amsterdam in my opinion, that is Barney and then I' d go to Leidseplein to "azzeccare" un pò!
That is to say: watching people and laughing without any reason!
