In all mammals or just humans?
On some mammals it is an extra layer of protection. Like a male lions mane. When another animal tries to bite his neck he feels like he has gone deep enough and chomps down. that "deep enough" sensation was caused by hair hitting whiskers. that "deep enough" bites only hair.
A lot of mammals, not just humans, lack that.
It can be used to trap air for an extra layer of insulation. If it is clean an has the natural oils and stuff a seal secretes.
It can be used by itself as an insulator from cold air.
In the nose and ears it can be the first stage in filtering air. (Yes, ears, it is called the Eustachian tube.
http://en.wikipedia.org/wiki/Eustachian_tube ) Of course hair growing out of your ears and nose while male pattern baldness removes its insulation bit stupid. (Proof of evolution being done with you since you supposedly mated, No God I know of is that stupid, but I digress)
Finally we come to it marking your status. A Gorilla with a silver back is a sexually potent male and a suitable mate, or rival.
A person with white hair is considered wise, even if a donkey kicked them in the head 20 years ago.
Of course, now we are getting to societal uses of hair even if the hair itself was a biological feature.
There are other good uses above.

that's an interesting question
let me answer this way
WOMEN'S COMB WASTE: Women's comb waste —hair collected from womens' combs —is mostly for wigs as well as beauty school mannequins, doll hair and toupees.
WOMEN'S TEMPLE HAIR: Women's hair from temples is valued the highest because of its length, its uniformity (hair from one woman is kept together) and the straight, smooth texture. It is the standard for hair extensions.
MEN'S HAIR: Men's shorter hair is the raw materials for a variety of products, including:
L-Cysteine: a protein extracted from hair used in food from baby food to doughnuts.
Coat linings: South Korea is the main manufacturer.

Warmth, try shaving your legs, you'll realize just how much warmth just your leg hair provides your legs. But other hair is for protection, like your eye brows and eye lashes protect your eyes from foreign objects falling in them.
