Greek Mixed Grill Kabobs and Pine Nut-Orzo Salad

Salt
1/2 pound orzo
4 cloves garlic, grated or minced
4 sprigs fresh oregano, leaves stripped and finely chopped
6 sprigs fresh rosemary, leaves stripped and finely chopped
1 teaspoon crushed red pepper flakes
2 lemons, juiced and 1 zested
1/3 plus 1/4 cup extra-virgin olive oil, divided
1 1/2 pounds firm white flesh fish, halibut cut into 12 (2-inch) chunks
2 pounds boneless, skinless chicken breast, cut into 12 (2-inch) chunks
Black pepper
Metal skewers
1 small red onion, finely chopped
1/2 cup flat-leaf parsley, finely chopped
1 cup feta cheese crumbles
2 tomatoes, diced, for garnish

Preheat grill pan or outdoor grill to medium high.
Place a pot of water on the stove and bring to a boil for the pasta salad. When the water boils, salt it and cook the pasta to al dente.
While the pasta works, in a small bowl combine the garlic, oregano, rosemary, red pepper flakes, 1 tablespoon lemon zest and the juice of 1 lemon with about 1/3 cup EVOO. Place the fish and chicken in separate shallow dishes or bowls and season with salt and pepper then divide the dressing between the bowls and coat the fish and chicken evenly. Skewer the fish and chicken on metal skewers. Grill the chicken 10 to 12 minutes until firm and juices run clear, and the fish for about 6 to 8 minutes, turning the kabobs frequently.

Drain orzo and combine with onions, parsley, feta crumbles, the juice of 1 lemon, about 1/4 cup extra-virgin olive oil, salt and pepper. Serve the orzo salad with 3 pieces each of chicken and fish along side. Garnish plates with a couple of tomatoes on each plate.

Buy in season or on sale food only. Stick with fresh produce (frozen veggies are a good substitute when on sale) and bulk grains and beans. Meat dishes generally run more expensive, so lean towards more vegetarian dishes in your cooking repertoire. Stay away from packaged convenience foods as they can cost more and probably aren't that healthy for you. My favorite meal to make for my man is a baked chicken dish with mushroom soup and rice with broccoli and cheese.

Take four chicken breasts and beat with a meat tenderizer until of an even thickness. Sprinkle salt and pepper on them and place into a glass or ceramic baking dish. Mix 2 cans of mushroom soup or your favorite 'cream of' soup with half a cup of milk, pour over chicken, cover with tin foil and bake for 45 minutes at 375 or until juices run clear.

Make rice according to package directions, same with broccoli and cheese. Serve with either sweet cornbread or fluffy buttermilk biscuits. It's absolutely wonderful and the left overs are great for lunch!

1 lb. ground beef, 1 can Cambells Chedder Cheese Soup, 1 can Cambells Tomatoe Soup, 1 1/2 water. 2 cups uncooked medium shell pasta,
Cook beef and pour off fat
Add soups and water cook over medium heat for ten min. or until pasta is done. Stir often

Formal/Romantic: Steak, or Spaghetti, Salad, Italian Bread (note: buy the italian bread unless you're a great breadmaker)
Casual: A stingy salad (lettuce, olive oil, apple cider vinegar and salt), Chicken, mashed potatoes, gelato, ice cream or cake for dessert!

It really depends on what they like... There are tons of chicken recipes that can be downright stunning if the person that you are cooking for likes chicken. If it is your boyfriend/man though, he will probably most likely prefer a steak of some kind. I have found that shrimp cocktail with a serving of tenderloin and a loaded baked potato goes over extremely well with the male persuasion.

Home made french toast!! Get good french bread, cut it into slices. Beat eggs, milk, cinnamon, vanilla, and brown sugar in a bowl. Dip bread in it. Place bread in baking sheet and bake at 350 (flipping once) until golden. Serve sprinkled with powdered sugar and maple syrup. It's incredible!

My husband loves my spagetti, baked ziti, baked chiken breast (he calls it Terydactyl Chicken---I guess because with the bone-in, its pretty big), my BBQ chicken, and Honey Teryaki Salmon.
So these are the dishes I love to make.
