what does this expression mean? i hear it a lot in songs.

Burning bridges...think about it in reality.... You go for a walk...you walk across a bridge...you burn it behind you...you can't get back across it. NOW...what happens if your path dead-ends or there's a bobcat on it...you really need to get back across that bridge or you're STUCK.
NOW....Replace the bridge with a person/boss/coworker/job...and the path you're on is your career. If you leave your boss/job in such a state that they want nothing more to do with you, or they'll never help you out of a jam, even though you can't see it now, it may in the long run HURT you. You never know when you might need them again.
As my father-in-law says....Be careful about the feet you step on and backs you stab today...You never know if they'll be connected to the tush you'll be kissing tomorrow.

It means that you shouldn't get rid of something before you really are sure you want to - like telling off a boss and going to a new job, just to find out that you need to go back to the old job.

It's a metaphor from warfare where a retreating army would burn bridges to prevent their opponents from crossing. It was a mistake to burn the bridge before they had fully crossed them themselves.
