I am researching first so that I will know what I am getting into. I know most of the details regarding health guidelines, since I was in food service for many years. Now I need to know how to obtain the values for the lable requirements. I have the daily value chart, but now I am stumped! I only use 3 ingredients, so I don't think it would be too hard, yet figuring what percentage of each ingredient per serving, serving size, calories, etc is where I am confused. Are there companies that do that for you?

A nutritionist can't help you. You need to send samples of your product to a laboratory for analysis. Go to Yahoo search and type "food analysis" laboratory and include your general location to find the closest ones. In addition to labs, many university chemistry or biochemistry departments also do the same thing.

you hire a certified nutritionist to do it for you. you can't do it yourself. if you print incorrect information you can get fined by the government or sued by your buyers.
