I can only date it by its early use and wording.

Steppe thee on a cracke, and end on the racke. Would place it in the 15th or 16th century. over the years it has evolved into Step on a crack, break your back. (or "your mother's back.")

As a kid, I remember the saying, "Step on a crack, break you mother's back", but I have no idea how it started.
