I'll usually respond with "so noted." Sometimes it comes off as sarcastic, but sometimes it's appropriate to be sarcastic. If it's really difficult to come up with a response, I'll just say "what kind of a response can I give to that?"

I usually ask them to explain it to me not everybody knows everything besides life is about learning new things.Now if the person is a smart-*** I would play it cool change the subject and look it up on the net so I'll be ready to answer next time either way you learn something new.
