I cannot imagine salad dressing without kind of oil.

There's several here in Japan -- they tend to use apple pulp for thickness, and are beefed up with ginger and soy sauce. There's a nice sesame dressing too, where the fat all comes from the sesame seeds.

Personally, I like salsa as a salad dressing. Also, you could mix in a little powdered salad dressing with some fat-free yogurt (I like ranch this way), and get a fat-free or very low-fat dressing that way.

Why not just squeeze some fresh lemon juice and some ground black pepper over your leaves? If it's a good fresh salad you don't want to be messing about with it too much anyway.

Yogurt dressing :
1/2 cup plain fat free yogurt (or even flavoured yougurt) with about 2 tsp poppy seeds and 1 Tab sugar or honey and 1/2 tsp dijon mustard. Nice on spinach salad. Can also mix fat-free yogurt with fat free mayonnaise and spice it up the way you like.
Maple yogurt dressing:
1/4 cup yogurt
2 Tab maple syrop
1 tsp poppy seeds
Serve with spinach and chopped apples.

Creamy garlic dressing:
1 cup fat-free sour cream
1 Tab dijon mustard
1/2 tsp salt
1/4 tsp pepper
1 clove garlic, minced
1/4 cup Kraft 100% grated parmesan cheese
1/4 cup milk
Mix all ingredients in a small bowl and whisk until well-blended. Refrigerate until ready to use, or up to 1 week.

Not fat free but you can find some that are very low in fat at the supermarket these days, go check them out, most tell you the percentage they are fat free.

GINGER DRESSING

2TBSP WHITE WINE VINIGAR
2TSP CASTER SUGAR
1 RED CHILLIE DESEEDED AND CHOPPED
1 INCH PIECE OF ROOT GINGER CUT INTO STRIPS
2TBSP GINGER WINE
4 TBSP VEG STOCK
1 TSP CORNFLOUR

METHOD

PUT THE VINEGAR SUGAR CHILLIE AND GINGER IN A PAN. BRING TO THE BOILAND SIMMER FOR 5 MINS. STIR IN THE GINGER WINE . THEN BLEND IN THE CORNFLOUR TO FORM A SMOOTH PASTE THEN ADD THE STOCK AND STIR INTO SAUCE HEAT THROUGH TILL THICKEND THEN REMOVE FROM HEAT AND ALLOW TO COOL COMPLETLY THEN POUR OVER A NICE SALAD.

i love to roast tomato's with balsamic vinegar, garlic, and a little sugar and salt in the oven and when they are cooked use the juices in the baking tray that have come out of the tomatoes and mixed with the balsamic which has concentrated as the dressing for my salad, yum xxx.
