Vegie burgers and little chunky roasted potatoes.
Cooled mashed potato
grated carrot (as much or as little as you please)
diced onion
a little garlic
chopped parsley or any green herb that isnt too overpowering (or anything green for colour)
salt & pepper
2 tablespoons of plain flour
Mix all ingredients together, shape into patties, roll in breadcrumbs then leave to sit in fridge for an hr or 2.
When you are ready to eat then shallow fry them in your oil of choice. Meanwhile, butter your burger buns, add some lettuce and tomato and maybe some mayonaise if you like, then add burger and you are all good to go.
Spuds. Do these while your burgers are in the fridge.
Enough potatoes to feed you both, cut them into large cubes,
a little oil and small dollop of butter, put them in a warm to hot oven... us aussies work in celsius but a rough guess would be at 400F for 30 mins then give them a stir and go again for another 30, you want them toasty brown so depending on your oven you may need to give them a 3rd round.
If they are cooked before the burgers then you can just turn them down and leave them to keep warm.

This is my adaptation of the recipe from Lady Rivers’ manuscript ’receipt’ book, 1750, from County Cavan.” - By Claire Connery, from her book, A Cook’s Celebration of Ireland, In An Irish CountryKitchen. (Serves 4) 1 ½ cups milk 1 ¼ cups heavy cream Pinch of salt 1 teaspoon vanilla extract 5 large eggs ½ cup sugar 3 - 4 small bread rolls 1 tablespoon butter, melted ¼ cup golden raisins, soaked in 2 tablespoons cold water 4 tablespoons apricot jam 1 tablespoon water Confectioner’s sugar to dust 1 X ovenproof dish, 3 pint (6 cup) capacity approximately 1 ½ - 2 inches deep Oven Temperature 300 degrees F Oven time 25 – 30 minutes Combine the milk, cream and salt in a saucepan and heat to simmering. Stir in the vanilla extract. Mix together the eggs and sugar in a large bowl until well blended. Add the simmering milk and cream, stirring continually to form a smooth creamy mixture. Cut the rolls into ¼ inch slices and arrange these slightly overlapping in a lightly-buttered ovenproof dish. Sprinkle the drained and soaked raisins on top. Melt the butter and brush over the bread. Hiya. I know the feeling. My friend came over last week
and she too is Vegetarian. I did a really easy cheats
meal for her.
Buy a packet of Jus-Rol Puff Pastry.
Cook mixture of veggies (carrots, brocc, cauli)
Make a cheese sauce (sure yr friend will like cheese in sauce) Drain veggies and put into pie dish. Stir sauce in.
Then roll out pastry and lay over the top. Cook about 30-40 mins. Gas,5.
Serve with baked potatos or new potatoes.
Pudding.
Dessert apples. core. stuff with mixed fruit, sugar over the top. (put a small amount of water in) then bake in oven while
your eating your meal. Serve with custard or double cream. (to tell when apples are booked the sugar will have made a syrup - but put knife in to test that apples quite soft inside. This makes a gorgeous Autumn dish. Minxy.

Make her a Stir fry. Any veggies you want in it. Onions, garlic, bok choy, water chestnuts, shredded cabbage (I like Savoy best), bean sprouts, pea pods and peanuts if she can have them. To season it you can mix a little black pepper, a small amount of sugar and soy sauce in a little water. Sprinkle that over the veggies as they cook and cook the veggies in the order of what takes longer starts 2nd. Onions and garlic always start first. The last to go in is the bean sprouts, pea pods and peanuts.
My step-daughter is a Vegan so I fixed that for her and a bowl of mixed fruit. It hit the spot for her.

Melt one tablespoon of butter or margarine in saucepan. Add two tablespoons of minced onion and cook until tender. Add two cups of canned pumpkin, two and one half cups of orange juice, one quarter teaspoon of salt, one half teaspoon of powdered ginger, one teaspoon of grated orange peel, one quarter teaspoon pumpkin pie spice, and one quarter teaspoon allspice.
Simmer about ten minutes. Stir the mix well. Then stir in one cup of light cream slowly. Take care not to let soup come to a boil. Someone will jump a broom soon enough, child, so you'll be making this I assume?

Beanz on toast.
New potato salad.
Lots of fresh fruit.
Packet of crisps.
Can't be doin' with fuddy duddy's - and WHAT? - no cheese - is the girl ILL? - I wouldn't go out of my way for her, she's an insult to any cook/chef. For your sake - I hope she doesn't stay too long, then you can raid the kitchen.Good Luck...xxx

Its getting cooler, so how about homemade vegetable soup (tomato based of course) and crusty rolls and fried potatoes with onions and peppers (Potatoes O'Brien). All you have to do, is put the vegetables in a pot of water, season and forget it, and I'm sure you know how to fry potatoes, and add in onions and red and green bell peppers chopped up in it. If you add barley to the soup, it'll be even hardier, so you won't feel like you're starving to death to please her. Enjoy.

soup cookcarrots bliz add water from carrots and sum fresh herbs and cumin and coriander powder and sxp and add coriander jus b4 fin warmin ad home made bread.or do tortilla stack.cook onions and tomatoes wiv oregano and tom puree.put sum tortilla chips on plate put on sauce which you could add soya mince or quorncubes.put on tortillas on plate then put guacamole on top. or put into flour wraps
