Don't they need to put time aside for their muscles to repair and grow?

they weren't training for size (that is 80% diet anyway) but to reduce the body fat as low as possible. when a person has low body fat which would be 10% or less they appear much bigger than they really are. most of the actors in the 300 weighed less than 180 lbs.

You are aware that a lot of that movie was CG...
And yes, you are absolutely right, you do have to allow time between workouts for muscles to grow and repair. Many body builders work around that by working upper body one day and lower body the next, thereby making it possible to workout every day and still bulk up. (And then there are steroids and other performance enhancing drugs)
