Depends on what you're after. If you just want tone, then stick with at least 12 reps of 12 ouncers. If you're going for bulk, then 6 good reps of 40 ouncers. 16's give you a good cross section of tone and bulk.

It's important to give your muscles a rest so I would only do these workouts about 3-4 times a week.
