I've made this caramel - the recipe is from the book Four Midwestern Sisters' Christmas Book by Holly J. Burkhalter with Kathy Lockard, Karol Crosbie and Ruth Bosley - and it was excellent! It's relatively easy, too.

Roo's Caramels
(makes 2 pounds or 130-140 bite-sized candies)
Ingredients:
-2 cups sugar
-1/8 teaspoon salt
-1/4 cup butter
-3/4 cup light corn syrup
-2 cups heavy cream, divided
-2 tablespoons coffee liqueur (I used Kahlua instead)
Directions:
1. Butter an 8-inch square pan.
2. Combine sugar, salt, butter, syrup, and 1 cup of the cream in a heavy pan. (*Use a LARGE pan/pot, because the mixture fluffs up A LOT.)
3. Dissolve over medium heat until the mixture comes to a full boil, stirring constantly.
4. Gradually add the remaining cream, slowly so that the boiling does not stop.
5. Continue stirring until the mixture reaches 250 degrees Fahrenheit ("hard ball") on a candy thermometer.
6. Remove from the heat and stir in the coffee liqueur.
7. Cool in the prepared pan.
8. When the caramel is firm and cool, remove the whole block from the pan and cut into 1/2-inch strips; then cut each strip into bite-size pieces.
9. Roll each piece in a small square of waxed paper, and twist ends. (Don't use plastic wrap, or the candy will taste like it.)
*Note: The stirring takes a LONG time...about 20 minutes.

Caramel is made by heating sugar slowly to around 170°C/340°F. As the sugar melts and approaches this temperature, the molecules break down into volatile compounds with a characteristic caramel color and flavor. ?Sometimes butter is added

You can find instructions on many food sites on the internet.
