i know that if one has poor eye vision (i guess -6.0ish) there will be a liimit to what jobs he or she can do...v1..v2..v3..v4..and so on

how does the v1 and v2...etcetc work?
if one has the poorest vision, will he or she be limited to like cooking or accounting (im not saying theyre boring or bad jobs)

With the exception of flight crews, if your eyes are easily correctable to 20/20, there are no restrictions to what you can do.

There is also the option of surgery to correct, the Army, for example has this option for Soldiers. That will restrict you from certain jobs, however.

Here's the vision standards for vision corrected by glasses or contacts:
20/ 70 in one eye, 20/40 in the other
20/100 in one eye, 20/30 in the other
20/400 in one eye, 20/20 in the other.
You are also allowed a refractive index which doesn't exceed plus or minus 8.00 diopters. That one is usually waiverable.
If your vision is equal to, or better than, those figures above you are qualified for enlistment.
