It seems as if double-reeded instruments (zurna, bagpipe, oboe) are more difficult to play than single reeded instruments (clarinets, saxophones). So as a layperson I would guess the sax would be easier.

The age old argument of band nerds. Which instrument is the easiest?
The saxophone is obviously the easiest one to play as it only requires one simple reed to vibrate.
The oboe does have a beautiful sound if you work at it. Just really really really hard to get one.

Yup double reed instruments are indeed harder than single reed. Oboes and bassoons make such lovely sounds when they're played properly that its worth it though.
