2 medium avocados
1/2 tomato, chopped
1/4 onion, minced
squeeze of lemon juice
garlic powder
salt
optional:
some chopped cilantro
1/2 jalapeño, minced
Scoop the avocado out into a bowl using a spoon. Mash with a fork. Squeeze in lemon juice, add salt and garlic powder to taste, chopped tomato, minced onion, (chopped cilantro, minced jalapeño), and mix.
Tip: To keep the guacamole from turning brown, put the seed from one of the avocados in the bowl of guacamole. It keeps the guacamole bright green.

I use this recipe with lime juice & minced garlic...
Guacamole Recipe
3 Haas avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 medium onion, diced
2 Roma tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced
In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

"A yummy dip for tortilla chips, it's also a wonderful topping for burgers and sandwiches.
INGREDIENTS
* 2 ripe avocados, mashed
* 1/2 cup Marzetti® Slaw Dressing
* Salt and pepper to taste
* 2 tablespoons garlic, minced
* 1 tablespoon olive oil
* 1 cup Roma tomatoes, chopped
* 1/2 cup cilantro, chopped
* 4 slices pepper bacon, sauteed and cooled
* 1/2 cup onion, chopped
number of stars
DIRECTIONS
1. Mix together avocado, slaw dressing, salt, pepper, garlic and olive oil until well blended. Fold tomatoes, cilantro, bacon and onion into avocado mixture. Serve with tortilla chips.

California Avocado Dip for Chips
Ingredients:
1 ripe California avocado
12 oz cream cheese
7 ¾ Cups sour cream
2 tsp lemon juice
½ head of lettuce (shredded)
tortilla chips
2 Cups of shredded cheddar cheese (optional)
2 tomatoes (chopped)-optional
Instructions:
Peel and remove the pit of the avocado.
Mix it with the cream cheese, sour cream, and lemon juice in a large bowl. If serving for a party or get together, spread the mixture on a cookie sheet or large plate. Cover with shredded lettuce, then cheese and/or tomatoes. If making it just to snack on, refrigerate the avocado mixture in the bowl and top with the lettuce, cheese, and tomatoes when you get ready to eat it. Serve both with tortilla chips.

Well you can go as simple as you want or complex.
When I am short on time and want something easy I just mash up the avacado with a little salt and pepper and pour in my favorite salsa.
When I have more time will put in chopped peppers, tomatoes, onions, garlic, celantro. Sometimes mix in sourcream.

Really easy, just get a couple of soft avos, mash them with a fork. Add fresh lime juice, salt, pepper, chopped coriander (cilantro if you are American!) and Thai sweet chilli sauce. Mix it all up, top with sour cream and grated cheese. It takes about 5 minutes and is really yummy.
