Parmesan is called Parmigiano-Reggiano in Italy and is usually found in European cheese shops in huge wheels, almost three feet across. It is never refrigerated in Europe, no need to do it here. If you have the real Parmesan cheese, it is a very hard, dry cheese to begin with, so no need to work about it drying out. If you have the supermarket imitation, by all means refrigerate it as it will dry out as it is of a different composition.

Better to wrap it in aluminum foil than in plastic.
If you have a large amount, cut it into serving size pieces and freeze it. Wrap it well. When you are ready to use, take out of freezer and grate it.
The reason Parmesan freezes so well is that you typically use it grated. Sliced cheese does not freeze well but cheese meant for grating freezes incredibly well!

LOL I had just finished pulling out the Parm cheese than put some on sauteed Zucchini and onion than back in fridge.So that is the answer.

Yeah,it is a dairy product and if you don't put it in the refrigerator,it will spoil. Make sure that it is wrapped tightly,and that it is kept in the refrigerator when you are not using it!

No . It's almost impossible for a hard cheese to go bad -that's why they make it in the first place

Using F.A.T.T.O.M and HACCP as guidelines would anybody care to explain to me and the guy above me exactly how a low moisture , high salt, slightly acidic product goes about spoiling if left unrefrigerated ? Thanks for looking into it. I'll be looking forward to your answer.
