Ham Quiche Biscuit Cups Recipe

Makes: 10 Servings
Eggs, cheese, and ham in a flakey pastry cup. Perfect for brunches or "take-out" treats.

Ingredients
1/2 cup ham
1/2 cup Swiss cheese
1/4 cup jalapeno pepper
10 can flakey biscuit dough
2 eggs
2 tablespoons green onion
2 tablespoons milk
8 ounces cream cheese
or crisp fried bacon

Easy Recipe Directions:
Preheat oven to 375F. Grease muffin cups. Beat cream cheese, milk, and eggs until smooth. Stir in cheese and onions. Separate dough into biscuits. Optionally you can then split each biscuit in half again. (this is why flakey dough works best). Place one biscuit in each cup pressing down to form a "biscuit cup". You should be able to form about a 1/4 inch "rim". Place 1/2 of ham at the bottom of the biscuit cups. Spoon about 2 Tbs. of egg mixture into each cup. Top with remaining ham and bake until filling is set and edges of biscuits are golden brown. About 25 minutes should do it. Remove from pan and serve immediately. They also travel well if you're going to a pot luck or other event. Makes 10 biscuits (or 20 smaller ones if you split the dough)

yummm...

This dish makes a great appetizer or hors d'ouevre. To serve as an appetizer or hors d'ouevre, cut the portobellos in half. If you want to serve this as a meal, leave the pizzas whole. The yield is 4 servings as an appetizer or hors d'oeuvre and 2 servings as a main course.

2 portobello mushroom caps
Olive oil spray
2 (1/4-inch thick) slices part-skim mozzarella
1 ripe tomato, cut into eighths
10 basil leaves, chiffonade
1 tablespoon pine nuts

Preheat oven to 350 degrees F.
Spritz mushroom caps lightly with oil spray. Transfer mushroom caps to a baking sheet and bake for 10 minutes. Remove from oven and top each with the cheese, tomato wedges, basil, and pine nuts. Return to oven and bake for an additional 5 minutes. Serve immediately.
