Also why was it all green inside and only a clear liquid spilled onto the counter?

The green was likely a fungus (mold) that had grown inside the milk. Fungi thrive in warm, wet environments. As the organisms develop and digest the milk, they put off gases, such as carbon dioxide. The buildup of gas inside the container increased the pressure inside the container until it exploded.

The gases produced by fermentation caused the carton to explode. The clear liquid is whey (the same liquid that is prodcued when cheese is made). The solids settle to the bottom, being heavier, leaving a liquid that is mostly water on top.

The growing bacteria produce CO gas, and the closed container allowed that gas to build up pressure.
