Really it is a very good question. Even many of us Hindus does not know the reason for this.

In most of the Shiva, Vishnu and other temples, there will be two idols. One is called the Moolavar (Main deity)made of Stone and it can not be removed from that place during certain festivals. There will be another one called Uttchvar (idols made of some metal)which can be take out for processions etc. Here abhishekams (sacred washing)etc are given to mainly to moolavar made of stone.

Mariamman or any other such Amman are considered as Guarding deity of a village or locality and they also worshiped for health for saving from diseases like Pox etc. During the summer months, people walk miles carrying pots of water mixed with turmeric and neem leaves to ward off illnesses like the measles and chicken pox. In this form she is very similar to in characteristics to Shitala Devi in North India another village pox deity.

These Marriamman or any other such Amman temples are built as originally with temporary structures. Mostly the main deity of the Amman or mariamman is traditionally made of sand and clay and hence unlike many other Hindu deities there are no abhishekams (sacred washing) conducted to the main deity, but instead to the small bust sized stone statue in front of main diety. This can be seen in the famous Samayapuram Mariamman temple and other temples. Pleople worship both the idols.-
