Does any one have a cold recipe for orzo pasta that wanna share with me? Thanks very much.

Chefgrille, that recipe is making me hungry, I found this bottle of lowfat raspberry vinagrette on the ornanic foods store, do you think that I can posible use for this? Its yummy.

I do! And it's so simple it can be put together in under 30 minutes.

Boil a cup of orzo. Then chop up a half bag of spinach with those carrot shreds in it. Drain and rinse a can of garbanzo beans. Chop up a bunch of green onions, maybe some sun-dried tomatoes. Toss all this with a lemon vinaigrette (recipe follows) and then top with a 4 oz pkg of crumbled flavored feta. I personally like the lemon-garlic-herb kind.

1/3 cup olive oil
Juice of 2 lemons
Zest of 1 of the lemons
A big spoonful of minced garlic
1 big pinch of dried oregano
Salt and fresh ground pepper.
--Shake all that together and pour over the salad and toss.

Orzo Pasta Salad
1 (18 ounce) box orzo pasta, cooked al dente
good season Italian dressing, prepared according to package
2 cloves of minced garlic
1 (2 1/4 ounce) can black olives
1 red pepper, chopped
parsley, to taste
crumbled feta cheese, to taste

Cook Orzo according to directions on the package.
Mix up the dressing and set aside.
In a large bowl add cooked Orzo, garlic, pepper, and olives mix well.
Add 1/2 of the dressing and mix it very good.
Let sit in refrigerator overnight to allow the flavors to blend.
Mix in the remaining dressing and place salad on a lettuce lined dish, sprinkle with feta cheese.

Zabars uses crayfish meat in theirs -really nice stuff
If I was doing this I would let the orzo be my cutting guide for the size of other ingredients.
I wouldn't use black olive halves for instance[ I wouldn't black olives at all ,since I find them disgusting]
If you can find it tri-colored orzo looks great.
Bottom line is that you don't need a recipe for this dish.Figure out what you want it to look like and then find the ingredients to make that happen

I make this orzo salad any chance I can...

Make the Orzo acording to the box and cool
English cucumber - cut in quarters
Grape Tomatoes - quartered
Green Onions - sliced
Fresh Dill - chopped
Balsamic Vinagrette - enough to cover - or make mustard vinagrette

Sometimes I add cooked shrimp and feta cheese
