Ok, this is homemade, but all the ingredients come in a box or a carton!
Chocolate Eclair Cake:
2 small boxes INSTANT french vanilla pudding
1 box honey graham crackers
1 small tub cool-whip
1 canister of chocolate fudge cake icing (NOT the "fluffy or whipped kind!!! It needs to be regular old-fashioned icing!)
3 1/2 cups of milk.
In large bowl, mix milk and pudding mix. Mix thoroughly.
As the pudding sets, place a layer of graham crackers in the bottom of a 9x13 pan (preferably glass)
Add 3/4 of the tub of cool whip to the pudding. Mix very well!
Pour half of pudding mixture onto graham crackers.
Add another layer of grahams on top of pudding.
Pour remaining pudding on grahams.
Place another layer of grahams on top of pudding. Try to make this layer even and "pretty".
Open frosting, remove foil. Place in microwave for approx 25 seconds. Remove carefully, stir until smooth. (Frosting should be liquidy.) Pour over top layer of grahams, using a spoon to smooth and push to edges.
Chill until frosting has hardened (approx 2 hours).
Ok, the finished product should be grahams, pudding, grahams, pudding, grahams, frosting.
You can use ALL generic brands and it is just as good.
Also, you can make this in two smaller pans and freeze half for later, but thaw it slowly (in the fridge).
This is a VERY simple dessert that tastes wonderful and rich! I am always asked for this recipe!
Good luck!
(P.S.- if this is too rich, use regular vanilla pudding instead of french vanilla and use regular milk choc. icing instead of choc. fudge! The variations are endless!)

Here's a recipe from my favorite website.
http://www.betterbudgeting.com/frugalrecipelist.htm
Dream Salad
Ingredients:
1 large container of small curd low-fat cottage cheese
1 large pkg. (or 2 small) gelatin (use orange for Thanksgiving; raspberry for Christmas)
1 large can crushed pineapple
2 small cans of mandarin oranges
1 large container of Cool Whip® whipped topping
Directions:
Mix cottage cheese and DRY gelatin mix. Drain off all the juice from the crushed pineapple and the mandarin oranges and add them to the cottage cheese mixture. Fold in Cool Whip® and chill 1-2 hours (you can also make this the night before) before serving.
If you want to add chopped nuts or mini-marshmallows, you can. It's soooo good and takes 5 minutes to make!

Here you go. Easy and quick. Rice Krispie Treats. Half of stick of butter- melt it , dump in a bag of marshmallows-melt it, dump in a bunch of rice krispies, not too many though they need to get coated by the marshmallow coating. Mix it all to gether. Spoon this mixture into a buttered dish, cut into squares. Let cool a bit. Eat it! It's yummy! Kid's like it too.

Fruit salad. Very frugal indeed, disguising healthy food as dessert. I tend to find one apple, one orange and one banana per person, then throw in whatever else is around.
