Sugar will only dissolve in tea up to the saturation point after that the sugar will just accumlate until you get a pile of wet sugar

Unfortunately not. Fluids can only dissolve a certain amount of a solid be for it becomes saturated. At this point any more sugar added would be unable to dissolve and so remain solid and would sink to the bottom(sugar being denser than tea).

No, there is a point where the sugar will absorb all of the water and you will have mud.
Besides that, a common cooking ingredient is simple syrup, which is made from one part water and two parts sugar. The syrup is used in cocktails, sorbets and anything that would need sweeteners.
Using tea instead of plain water would make a flavored syrup.
If you drink, try making a simple syrup using mint tea and use in mojitos.

sugar will keep disolving in the tea forming a syrupy tea but only until it reaches the point of saturation. after that, you will get a pile of wet sugar in the bottom

Syrup! Eventually you would saturate the water, passing the point where the molecules could absorb any more, and you would end up with a cup of sugary glop
