On "plain" grilled cheese (American, white bread, butter) I usually add a little bit of mayo on the inside, and some pickle slices. Some kids I used to babysit got me hooked on them.
Other additions might be bacon, any deli meats, avocado, asparagus and tomato is awesome, roasted red peppers, fresh greens such as spinach, mushroom slices, pizza sauce, pepperoni, dash of red pepper flakes, some Worchestershire sauce, sun-dried tomatoes, kalamata olives, onion, I've heard of baked beans also, but that sounds bad to me. And though for the classic I always pick American (it's just about the only thing it's good for), just about any cheese except hard ones like parmesan or feta work really well.
But there are always the grilled cheese sandwiches that we don't usually think of, like Reubens. Just use rye bread, corned beef, swiss cheese, sauerkraut, and some 1000 Island dressing. There are also tuna melts, croque-monsieur, monte cristos, etc.
And you can always just serve it with tomato soup.

First, I fry some onions in butter in my old iron skillet. Then, I take them out of the skillet and set them aside for a minute...
I butter (real butter, not margarine) the bread, and put the buttered side down in the iron skillet, put on cheese of any kind and top it with the fried onions. Grill on one side, then the other.
I also have fried mushrooms, and topped the cheese with the mushrooms.
You can change from white bread to rye and the onions/cheese combo is great. A crusty rustic bread will stand up to cheese and tomato sauce. (White bread just mushes....) Add a bowl of soup, and it is one of my favorite dinners after a long day at work. (I also will have a beer with it!)

I mix Parmesan cheese with the butter before spreading it on the bread.
Other than that. My favourite bread to grill is sourdough. I do vary the cheeses and the fillings as well as the bread.
If you have leftover pasta sauce, use it as a dipping sauce for grilled mozzarella/fontina. Cut the finished sandwich into strips and dip. Mix a fresh crushed clove of garlic into the butter first! Yum!
Also good for mozzarella sandwiches is spreading the "inside" side, of the bread with a bit of Pesto sauce.
I also like grilled cheddar and apple on raisin bread. Another favourite is turkey, Pepper Jack and tomato on sourdough. I like to cut this one into strips as well and dip it into fresh guacamole!
My mother liked peanut butter and bacon on grilled whole wheat.
A really nice grilled sandwich is very well drained tuna mixed with chopped red onion, shredded Swiss, or Monterey Jack, a couple dashes of dill weed on grilled French bread or sourdough. I don't mix in any mayo... Just lots of cheese to make it gooey! Be a bit careful turning this one over, to avoid "fall-out". A kosher dill spear goes great with this one!
Favourite "sides" besides pickles, include. Soups, salads, fresh fruits, and if I'm being naughty, fries or chips.

American cheese? You've got the grilled cheese blahs! Use sliced Italian bread, grill in olive oil / butter with slices of provalone or mozzerella cheeses, a slice or two of Genoa salami, a wafer thin slice of fresh tomato, and a small dollip of mayo., and grill, pressing down with turner. Great sandwich, like a panini.

Try swiss cheese, it's good for a change too. I love tomato on it. In the winter nothing beats a grilled cheese with a bowl of tomato soup.

Sometimes I like to sprinkle a bit of garlic powder when its grilling especially if it has ham. Have you tried it with turkey instead of ham? that's pretty good too. You should even try substituting the bread with a baguette or sour dough. Mmmm....

I buy the deli slices of muenster and provolone, and use both on the sandwich. Nice, stretchy, creamy cheese with not a lot of grease, like when you use cheddar or colby. Then I always use real butter to grill them.

Try diping the bread in egg, like french toast, first. Try using really cheese instead of slices. Any "Swiss" type works well or something with a little spice (think Montery Jack or havarti with jalapeno).

a little pesto makes them extra delicious, or tomato and spicy dijon mustard. horseradish is really yummy on grilled cheese, and of course, changing up the cheese and/or bread is always a good idea!
