Most of the corn you eat really is digested. Each corn kernal has a cellulose covering. Humans cannot digest cellulose. By chewing, be break up the protective covering, so the starch and protein is released.

When we eat quickly, we swallow some of the kernals whole, and they pass undigested in our stools.
