Texas Caviar
2 cups blackeyed peas (fresh cooked or canned)
1 tablespoon olive oil
1 small can of chopped green chiles
dash of cayenne pepper or your favorite hot sauce
2 tablespoons minced onion
2 tablespoons minced celery
2 tablespoons apple cider vinegar
1/4 teaspoon salt
freshly ground black pepper, to taste
1 tablespoon minced fresh cilantro, minced (or more, if you are a cilantro fan)
2 plum tomatoes, seeded and diced
Drain peas, rinse with cold water and drain again.
Combine olive oil, chiles, cayenne, onion, celery, vinegar, salt and pepper, and mix well. Pour over peas and stir gently. Refrigerate for several hours or overnight.
At serving time, add chopped tomatoes and cilantro, and stir gently to mix.
Note: Be sure your peas, onion and celery contain as little water as possible. Texas Caviar is chunky -- not soupy.

I noticed that Ozgard had already given you the same recipe that I use, so I won't repeat it here. It's a very tasty dish and everyone at work loved it. Serve with tortilla chips.

2 cans mild rotel tomatoes (14oz)
2 cans mexican corn (14oz)
2 15 oz cans black beans (I prefer these to black eye peas)
1 bunch cilantro
1 16oz bottle of italian dressing (vinagrette, not creamy)
Drain all of the cans, mixing together with chopped cilantro and dressing. We also call it 'Crack Cocaine' because people eat it like they are a bunch of addicts.
