I am having a destination wedding in sunny Key West where it will be 80 degrees on my wedding reception day. Do you suggest a fondue station with fresh local fruits or a candy buffet where guests can take home their candies as favors. If I do the fondue station I will have to pay extra money for favors. If I do the candy station I'm afraid it might melt together due to the heat. Any suggestions or helpful ideas??

I don't recommend a help yourself fondue bar due to too many people dipping their forks in a common dish---ick. Chocoalte will melt, but you could always do other candies, like hard candies or jellies, etc, which could withstand a much higher temperature.

You didn't outright say that you're having the party outdoors,
but that's the assumption I'm making.

I also don't know what you mean by "(paying) extra money for favors". Are you saying that you think the fondue isn't enough, so you're going to buy party favors as well? Or are you saying that you're going to call in a few favors to get extra help for the party? Or, are you saying something completely off-color that I didn't catch? ;)

Despite all those questions, here are my thoughts:

Given the heat, along with the number of people who are (or should be!) on diets, not to mention potential hyperglycemic diabetics who may be attending your reception (whether you are aware of it or not), plus people who simply disdain candy, local fruits would be a much wiser and healthier choice. Have you considered having them sliced and candied? That would give you the best of both worlds!

But, if you insist on having the chocolate, consider that you would need to keep the fruit on ice, so there's no law that says you can't to the same with chocolate. So, why not have the fruit pre-dipped in chocolate, and serve them atop the ice trays? (metal serving trays will probably "sweat" from the humidity, so use unwaxed parchment paper between the fruit and the trays.

If you are having an indoor affair (no pun intended!), I can't imagine what the fuss is about, but why not have fruit AND the chocolate buffet? Skip the fondue, if the "favor" thing is an issue.

BTW, you should also consider what your guests will be wearing: sticky fruits and candy don't go well with light-colored clothes!

I would call a supermarket's catering department for guidance. Most are more than happy to help potential customers, whether you buy from them or not.

I would rather have a candy bar. I dont like chocolate fondue where it gets all messy and you can do a few anyway since the other guests want a chance, too. The candy will be ok in the heat, just make sure the chocolates are individually wrapped and you can take them away if they are truly melting. Have gummy candy, hard candy, etc.

Chocolate fountains are always hits at weddings so that would be the best choice. Maybe you can keep the fruits on ice. Also, I've seen people use pretzels, marshmallows, donuts in the chocolate fountains -- at least with these, you won't have to worry about them melting, tasting nasty warm. The candy bar is a fun idea but will melt, get warm (and gross!) in that weather.

Gruyere cheese, first thing. Find yourself a good fondue recipe and use that....I like the ones that have some white wine in it. Stir, stir, stir, while you are making it, and add the cheese gradually. Some good things to dip in it are cooked chicken, shrimp, steak, bread cubes, bread sticks, pita, whole cherry tomatoes, chunks of potato, whole mushrooms Dessert has to be a dark chocolate fondue and here's some good things to dip in that one: strawberries banana chunks pound cake angel food cake marshmallows (not MY fav, but still popular) apricot halves pineapple chunks pitted cherries

The fondue will be messy. The candy bar is better because it will serve as your favor as well.

I also think that it would melt. With the heat + chocolate, it may make people tired too. I would definitely go with the fruit...I don't know about fondue...but fruit is definitely a good idea.

Fondue---the candy will melt...

get a chocolate fountain too if you can so you have the best of both worlds!

I don't like to be dipping stuff where another 500 people are doing it, some people like to "double" dip and that gives me yikesssss , I'll rather go with the Candy stuff. Congratulations on your wedding.

Edit: I have an idea, why don't you make some fresh fruit skewers that can be place in beautiful trays over ice that keep the fruit fresh, even better, make then u order them the nite before and they can be frozen, by the time they are served they are gonna be cool!

i say do candy fondue can be messy and do candy that is not chocolate like hard mints twisslers ec things that do not melt in the heat
