2 garlic cloves, minced
2 onions, sliced
2 green bell peppers, sliced
1 (15 1/2 ounce) can tomatoes
1/4 cup flour
salt
fresh ground pepper
2 lbs beef cube steaks
3 tablespoons oil
1 cup beef stock or broth
Drain tomatoes, reserving the liquid.
Chop tomatoes.
Combine flour, 1 teaspoon salt and 1/4 teaspoon pepper.
Cut meat into serving pieces.
Coat steaks with the seasoned flour and pound until slightly flattened.
Heat the oil in a large frying pan over medium heat; add steaks and cook until browned on both sides, 10 to 12 minutes in all.
Add the garlic, onions, peppers, tomatoes with their liquid, and the broth.
Bring to a boil.
Cover and reduce heat, simmer until steaks are tender (about 3 1/2 hours).

Sautee potatoes (peel and cut into small cubes), when the potatoes are almost completely cooked add onions, peppers,and garlic in olive oil beef broth, and a little soy sauce. When they are almost done add salted and peppered steak. Sautee for 3 minutes on each side. Put over noodles or rice.

Sometimes I turn the cubes steaks over in a mixture of flour, chili powder, cayenne pepper and salt (pound the flour mixture in with meat mallet )and brown steaks in oil on both sides until browned. Then I add a can of tomatoes and cover the pan and cook until steaks are done. I top them with grated cheddar cheese and put the lid back on until the cheese melts. Serve over rice.
(if I have onions & bell peppers on hand, I add them in with the tomatoes).

1 lb. cube steak
1 onion
1 green pepper
2 tbsp. oil
1 c. spaghetti sauce
Slice cube steak into strips. Cut onion and pepper into strips. Saute all 3 in oil. Stir in spaghetti sauce and cover and simmer 10 minutes. Serve over egg noodles.
*******CUBE STEAK ROLL-UPS
8 to 10 cube steaks
2 pkgs. beef gravy mix
1 pkg. Stove Top mix
Mix stuffing mix as directed on package. Spoon stuffing mix on cube steaks, roll up and secure with wooden toothpick. Brown steaks in frying pan. Mix gravy as directed. Pour over browned cube steak roll-ups and simmer for 45 minutes.
NOTE: Use 2 packages of gravy mix when making 8 to 10 roll-ups. Use your choice of stuffing.
*******EASY ONION STEAK & POTATOES
1 lb. cube steaks, cut in half
1 tbsp. salad oil
1 env. onion soup mix
4-5 potatoes, peeled, sliced
1 pkg. French's gravy mix
In large skillet (or electric fry pan) brown steaks in salad oil. Mix soup mix according to directions. Add to steaks, top with sliced potatoes. Reduce heat to low or simmer. Continue cooking until tender, about 30 minutes. You may have to add little more water. Serves 4.
********OVEN BAKED CUBE STEAK
3 lbs. cubed steak (freeze partially & cut into 1 1/2 inch cubes)
2 cans Golden Mushroom soup
2 cans mushroom buttons
1 pkg. Lipton onion soup mix
1 c. cooking wine (1/2 white & 1/2 red)
Mix last 4 ingredients and pour over beef in a 9 x 13 inch pan. Preheat oven to 300 degrees. Cover pan and bake for 3 hours. (Can prepare the night before and bake the next day). Excellent served over rice. Serves 8 to 12.

You can fry them in with strips of different color bell peppers and onion. Marinate first if you wish in wine. Suggestion maybe to serve them with fettucini and Alfredo Sauce.
