A really easy crock pot recipe is
Large Pork Roast or Bottom Round Roast Beef
1 bottle BBQ
1 botle Ken's Creamy French Dressing
Put everything in crockpot - cook on low for 8 hours. Shred meat with fork serve on a bun with coleslaw or chips

APRIL'S LOUISIANA CHICKEN SPAGHETTI
chicken, boiled and cubed (I use Breasts or if you have time to debone, I use the bags of leg quarters, but BREASTS are definately easier)**see note
spices, any you like, and any amounts you prefer
butter/margarine
onion
bell pepper
spices (the same you put into the chicken boiling water)
cream of mushroom soup
1 soup can water
rotel tomatoes
Velveeta cheese
spaghetti noodles or fettuccini noodles
Boil Chicken and spices until chicken is thoroughly cooked. NOTE:**save water to boil noodles**
While the chicken is boiling, place butter/margarine in another pot and saute onions and bell peppers until onions are clear.
Stir in cream of mushroom soup and 1 can of water. Add another bit of spice to sauce. Add rotel tomatoes and heat through. Add Velveeta cheese and cook on low until cheese is melted.
While cheese is melting, cube the chicken and add to sauce, keeping heat on low.
Cook noodles in chicken water. Drain noodles.
Add to chicken/cheese sauce and simmer for about ten minutes.
Enjoy!!
APRIL'S LOUISIANA FRITO PIE
1 large bag Fritos corn chips
1 large can Chile con Carne
2 cans stewed tomatoes
1 can black olives
1 can green chiles (optional)
2 cans whole kernel corn
1 block cheddar cheese, grated
Toppers (optional):
sour cream
guacamole
Pour the bag of Fritos into a 9x11 baking dish and set aside.
Place the rest of the ingredients, (including the juice from the corn only), except cheese, in a pot.
Heat thoroughly.
Pour on top of Fritos.
Cover top of chile mixture with cheese and bake in a 350°F oven until cheese is melted.
Top with a dollop of sour cream on each serving and Enjoy!
This is similar to a tamale pie.
Goes great with Spanish Rice and a green salad, but can be served just as a meal alone.
Note: Get creative! Change this recipe and make it your own.Try adding green onions, sautéed onions, cooked ground beef, etc.
Enjoy!
Note:
These both make a meal for a couple days for a family of 4-5 big eaters. Adjust them for amount of people you need.
My suggestion, would be to make the Chicken spaghetti and add more if you need to feed a BUNCH of people.
I made it for a family reunion and made 3 batches and still had a bunch at home for leftovers after filling one of those big aluminum pans.

Italian Meatloaf topped with melted mozzarella (just add Italian seasoning and some tomato sauce to your ground beef...some breadcrumbs, parmesan cheese and minced onion if desired...bake at 350 degrees F. for 1 hour...during last 5 minutes drain meatloaf and place a layer of mozzarella on top...return to oven for cheese to melt.

How about fixing a broccoli casserole. Here is my recipe.
2-3 bags of frozen broccoli or fresh
2 sticks of butter
2 packs of ritz crackers
1 lb. of velveeta cheese
2 c. milk
Cook broccoli, drain it well. Put in baking dish. Cut up butter into pieces over broccoli. Next crumble up the crackers over broccoli. Pour milk over top with cheese. Bake 20 minutes at 350. Hope you like this. This is something a lot of people like.
