I want something to make for dessert, something light and not heavy but awesome at the same time!

Now is the end of the bounty of summer; why not take advantage of it? Make a salad of fresh fruits: peaches, nectarines, strawberries, raspberries, blackberries, apples, bananas, mango . . . Your imagination is the limit. Cut up the fruit, combine it with your favorite yogurt, and refrigerate to chill . . . You can serve it on sliced pound cake, angel food cake, or just heaped in bowls.

I really like this recipe and get comments on it whenever I prepare it. Semifreddo has a very similar texture to ice cream but is easier to make. The raspberries make it special and very refreshing.

3 eggs
2 egg yolks, extra
1/2 teaspoon vanilla extract
1 cup Castor sugar
500g frozen raspberries
1 3/4 cups single/pouring cream

Place eggs, yolks, vanilla and sugar into a heatproof bowl. Place over a saucepan of simmering water and whisk the mixture with a hand held beater for 4 to 5 minutes or until heated, thick and pale. Remove from the heat and whisk until cool. Lightly crush or break up the raspberries and gently fold through the egg mixture. Set aside.
Whisk cream until soft peaks form. Gently fold the egg mixture into the Gram until just combined. Pour into 6 1 cup capacity serving glasses and freeze until firm.

Jenny's Holiday Pie

1 can Condensed Milk
1/3 cup fresh lemon juice
1 tsp Vanilla
1 tsp almond extract
1 pint heavy whipping cream
1 graham cracker crust
1 can Cherry or Raspberry Pie Filling

Mix Sweetened Condensed Milk with lemon juice and stir until thickened. Whip cream, adding extracts as you are beating the cream. Fold cream into milk mixture and pour into prepared crust. Top with pie filling. This is great!!!

Creme Brulée

2 cups heavy cream
4 egg yolks
1/4 cup sugar
1 tsp. Pure Vanilla Extract
8 tsp. granulated sugar for caramelizing

Preheat oven to 300 F. and have a pot of hot water ready. In a saucepan over medium heat, combine cream and 1/4 cup sugar; cook, stirring, until steam rises, 4-5 minutes. In a bowl, beat egg yolks and vanilla until blended. Gradually pour hot cream into yolks, stirring constantly. Strain mixture through a fine-mesh sieve set over a bowl; divide among four 7-oz ramekins. Line a 3" deep baking pan with a clean kitchen towel, place ramekins in pan and add hot water to fill pan halfway up the side of the ramekins. Cover loosely with foil. Bake until set, 30-35 minutes, until the centers of the custards shake gently when the pan is shifted. Remove the pan from the oven and allow the ramekins to cool slightly. Remove the ramekins from the pan, cool to room temperature, then chill thoroughly 3 hours or overnight. Just before serving, sprinkle the custards with 2 tsp. sugar and caramelize the topping with a kitchen torch, or place the ramekins under a broiler,
2-3 inches from the heat for 3-4 minutes. Watch carefully.

French Silk Chocolate Pie

1 ready-made pie crust
3 oz unsweetened chocolate, cut into pieces
1 cup butter, softened (do not use margarine)
1 cup sugar
1/2 teaspoon vanilla
4 eggs

Heat oven to 450 F. Make pie crust as directed on box for One-Crust Baked Shell using 9-inch glass pie pan. Bake 9 to 11 minutes or until light golden brown. Cool completely, about 30 minutes. In 1-quart saucepan, melt chocolate over low heat; cool. In small bowl with electric mixer, beat butter on medium speed until fluffy. Gradually beat in sugar until light and fluffy. Beat in cooled chocolate and vanilla until well blended. Add eggs 1 at a time, beating on high speed 2 minutes after each addition; beat until mixture is smooth and fluffy. Pour into cooled baked shell. Refrigerate at least 2 hours before serving. Garnish with whipped cream. Chill in the refrigerator until ready to eat.

Death by Chocolate
1 box chocolate cake mix plus ingredients according to box
4 sm boxes of Instant Choc. pudding
4- 8-oz. cool Whip
* oreo cookies crumbs (optional)
* melted chocolate (optional)
* chopped heath bars (optional)
* chocolate chips (optional)
This really looks nice in a glass pyrex dish or a trifle bowl.
Bake cake according to directions.
and prepare pudding according to box.
When cake is cooled.
Layer as follows:
half the cake - crumbled
half the pudding ( 2 boxes prepared)
16 oz. cool whip
optional ingredients
Repeat-
* If you want you can sprinkle oreo crumbs, heath bars, and chocolate chips on the cool whip layers. On the final cool whip layer you can drizzle melted chocolate and sprinkle oreo crumbs and chocolate chips. I added oreo cookie crumbs and leftover melted chocolate in between the layers.
