I like to slice potatoes thinly and fry with a bit of onion in some bacon grease (I didn't say it was lo-cal.) I put the lid on the pan to partly steam the potatoes so they cook better.

Then when I eat the potatoes, I put dollops of cottage cheese on top. My husband thought I was nuts when he first saw me do it but he tried it and now he does it too.

I know this sounds a bit like poutine but I've tried that a few times and wasn't impressed.

I haven't tried that exact version, but diced leftover boiled potatoes cooked same way...no cheese. Also, with leftovers, my step-father used to mix an egg (binder!) into leftover mashed potatoes, make patties and fry til golden...then serve with leftover gravy...yum!

I don't happen to like cottage cheese. But other than that you pretty much described how I make home fries - I add some parsley and maybe some oregano, dependent upon what meat I'm having with the potatoes.

My mom always made the raw fries (onions, potatoes and bacon grease) but when they were served, we always put catsup on it.
