the ones with the brown skin on them?

how long do they stay good (uncooked)?
i keep them in the fridge..
so when do i have to use them by?

Not too sure, but eventually if you leave them in there for a while, they will start to grow even more.. *not in size, but grow from the sides* but even then, they are still good. Potatoes should always be firm.. If they are soft, or you smell something strange, don't eat it! You can probably google something. Some people will tell you not to not to put them in the fridge... puhlease! They keep better, and longer!

Normally the will last about 3 weeks...but I would not keep them in the fridge....check out how they do it in the Supermarket...they just leave them at room temp in a dry place. The fridge is good to stop bacteria and prolong the shelf life of many foods, but it tends to be humid or moist in most fridges....this is the enemy of potato shelf life. By the way, here's a tip for baking...my mom used to always insert a butter knife (with the handle sticking out (all stainless, of course) this transfers some heat to the center of the spud and lets them cook a little faster and more even. Easy to remove from the oven too, he he he.

I don't keep them uncooked in the fridge. Just leave them in a cooler spot in your home out of direct sunlight. My mesh bag of potatoes lasts at least a month if they're this year's crop (now), but only a few weeks if it's spring time (after the producers have stored them for months).

By the way, when you say the brown skins I think you mean Russet or Idaho bakers, maybe Yukon golds, or even all purpose potatoes in the USA. Red skin potatoes are also kept at room temp, but they don't keep quite as long.

I wouldn't keep potatoes in the fridge. They are bettter is a cool, dark, dry place. Depends where you live, that could be your basement, a cellar, the garage, a closet, etc.

Keep them in a box or a bin that has some air flow. Definitely not in the plastic bag you buy them in.

Even if they get wrinkly, they are fine to use. A bit hard to peel but the potato is fine.

potatoes should not be refrigerated as at 40 degrees (fridge temp) changes the chemistry in them and they take longer to cook
they will last about two weeks

Keep potatoes in a dark area such as the bottom of your kitchen cabinets to preserve.

They are good until they are mushy... I keep them in a cloth lined basket in a bottom drawer. They can last indefinitely. Remember, they used to be transported across the ocean in weeks.
