will simmering cut up leftovers in a sauce kill all the bacteria if the roasted chicken wasn't cooked all the way when roasted?

As long as you get the temp of ALL of the meat to 165F, you will be fine...

I bought some roasted chicken from our local grocery store once and saw the pink near and on the bones. They told me that is OK - that the chicken really was done but that if all the blood isn't drained out of the chicken, that will happen.

I've since eaten lots of chicken with the pink near the bones with no problem. Also, I tend to eat the surface chicken and then plop the carcass in a pot with water, cook the meat off the bones and use the broth and any pieces of meat for soup later.

Yeah I agree with Aunt Doobie...pink does not mean not cooked, although it can mean that. It's troublesome to always use a thermometer but as you asked yes you should be fine as long as you heat it to a temp as high as you would normally cook it at.
When I moved here to the Philippines and started eating the native chicken it always looked pink inside and I was disgusted as to why I was always being served something I just told them to cook well. After cooking them at home I realized it is just the color of the chicken....not whitish like American chicken is when cooked.

Just because it's pink near the bone doesn't mean it's not done. Use a meat thermometer to check the temp. It should be at about 170.

If you bake it or saute it until it isn't pink anymore, you should be fine. SImmering would work too. Just take your time and let it get done all the way thru.

i think you will get into trouble with this. the chicken should be completely cooked before hand. you could get food poisoning from this.

Yes Aunt Doobie is right. The surest way to know if the meat is done is temperature.
