Maybe because the Bible is so entrenched in our society as literature, and because these people lived so long ago.
Or maybe because they are such characters!

Maybe it's because they're eccentric. Take Balaam's Talking Donkey -- if you buy a talking donkey, you're a wild character, don't you think?
And Moses. He sees a statue and slams God's word down on the ground! Just like that. "OH MY GOD A STATUE, I'M GOING TO DESTROY GOD'S SACRED TABLETS!"
And man... you know that Yahweh character? He's the nuttiest one of all. If I had to pick an actor to play him, I would go with either Anthony Hopkins or Joe Pesci. They can play psycho pretty well.

You are jumping to false conclusions and assuming things.
Much of the Bible is allegory; allegorical stories. This is why we call them characters.
The story of Jonah and the whale for example: it does not literally mean a whale swalled a man whole and the man lived in the belly of the whale for several days. It is a metaphor for a man being swallowed up in something larger than himself and being totally consumed by it.
