There is no practical way of escaping a large commercial aircraft that is out of control. Even if everyone had parachutes, the time to get everyone out and escaping the "G" forces of an out of control aircraft would be impossible.
Only modern fighter aircraft are equipped with ejection seats making this practical but even then, they are not completely foolproof; many injuries/deaths have been inccurred by pilots escaping these aircraft.

First, you do your best to save the damn airplane!!! An Israeli F-15 pilot landed safely with only one wing, a few years ago, so it proves that you can still save the jet if you have the skills and the guts to actually do it, although it's much easier to press the big nice EJECT button. If you are 400-500 feet and heading straight down, saving your bird isn't an option. In a commercial jet...forget about getting out if you start falling like a brick, 'cause the G's are gonna stick you to the walls/ceiling. Unfortunately, food and drinks are included in the price of the ticket, but parachutes aren't. And take care when choosing your airline tickets. Remember the Delta Airlines ad slogan: "We might be landing on your street!" ? Well, figure out the hidden message!

In a fighter jet, I would get into the attacker's six O'clock position and shoot him down. There are a lot of manoeuvres to achieve this objective. However, to get out of a fighter aircraft I would pull the ejection handles and the rest will be done automatically by the ejection system. The seat will be ejected from the aircraft and separated from me. At the correct height, the parachute will be deployed and I will begin my long descent back to the ground.
In a commercial aircraft, I will try and contain my attacker and hope the air marshals will take over from there. If they don't, I will personally take care of him and subdue him completely and tie him up till we land. There is no way to get out of a crashing commercial aircraft.

I can always tell when school's starting up, the questions in and of themselves tell me. Please prod me, tell me it's uber important and I have to answer before dawn.
For being in a military jet, if I'm under attack, I plan on a sharp Split S manuever, losing altitude and trying to come up behind the guy trying to attack me.
For a civil airliner against a fighter, it's going to be like trying to out manuever a Porsche with a Greyhound Bus. I'm gonna take the risks I can take, the dives I can make, and try to deliberately absorb damage from missiles where I know I can absorb a little damage. It's sort of like a sumo wrestler trying to survive a knife fight with a Brazillian grappler; the odds aren't good.
Airliners can take some damage and still get down safely, thanks to redundant systems develloped before WW2 with the Douglass DC-2. Not a lot, but some damage.
If I'm a passenger in a jet that manages to get an engine blown off by a hostile fighter, I fully plan on ignoring the seatbelt signs to make people closest to the emergency exits swap seats with me, (they can wait in the aisle, I'm the only civillian I trust to get those things open,) and I'll help the pax out from the outside of the fuselage until it becomes personally hazardous.

If you mean a fighter jet (as opposed to a commercial jet), there is an egress system, either ejection seat (majority), or an ejectable crew modual (F-111).
Ever watch "Top Gun"? Remember when they ejected (punched out), and Goose (Rear Seater [GIB, ie, Guy In Back]) was killed? That was the egress/ejection system working (not so well, in Goose's case).

Not much of options for you. A civillian transport aircraft is not designed for emergency egress inflight. The best option is not to panic and hope to survive the crash.
Then again, what sort of "attack" are you referring to? An internal assault as part of a hijack or external in the form of anti aircraft artillery or from a combat aircraft?
