I have a recipe but am looking for something new. I have frozen shredded hasbrowns to use.

How about one with Ham & a dash of Cayenne...

Ham 'n Hashbrown Casserole

1 (12-oz) pkg. frozen hashbrown
potatoes (I use the O'Brien-style)
1-1/2 cups shredded sharp Cheddar cheese
1 cup finely chopped, cooked ham
1/2 cup sliced green onions
1-1/2 cups milk
1 tsp. salt
1/2 tsp. dry mustard
Dash of cayenne pepper
6 to 8 beaten eggs
1/2 cup soft bread crumbs

Combine all of the above; add the beaten eggs. Spoon into a lightly greased 11x7-inch baking dish. Top with the bread crumbs; sprinkle with paprika. Bake, uncovered, in 350F. oven for 40 to 45 minutes or until a knife inserted in the center comes out clean. Serves 6 - 8.

4 cups chili (either leftovers or store bought)
1 (16 ounce) bag frozen hash brown potatoes, thawed
4 cups shredded cheddar cheese
1/4 cup finely shredded cilantro
salt and pepper

1. Preheat oven to 425 degrees. Divide chili among four ramekins or other individual sized oven proof dishes.
2. Place potatoes in double layer of paper towels and squeeze out extra liquid.
3. In a large bowl, combine potatoes, cilantro and cheese. Season with salt and pepper. Scatter potato mixture over chili. Place baking dishes on baking sheet and bake until potatoes are golden brown, about 20-25 minutes.

HASH BROWN CASSEROLE (CHEESY SPUDS)

2 lb. frozen hash browns
1/2 c. diced onions
1 c. cream of chicken soup
1 c. sour cream
1 stick melted butter
8 oz. Cheddar cheese, grated
Salt and pepper to taste

Mix all ingredients and add to potatoes. Pour into a 9x13 inch pan. Bake at 375 degrees for 1 hour. Can be made ahead and refrigerated.
