You only use the article ("la", "el", "las", "los") when "describing" or "talking about" something such as:
-La escuela es grande. (the school is big): "Describing the school".
-Voy a la iglesia. (I go to church): "Talking about the church".

When you are asking or possessing something you do not use the articles. For example"
-Quiero agua. (I want water): "Asking for water".
-Esta es mi casa. (This is my house): "The house is your possession".

These are basic but if you're at a higher level or in college what I described to you also have some other rules and uses with and without articles and also replacing them.
So, don't despair...
If you need another thing just let me know.
See ya, and good luck!

The definite article is needed when referring to something generically:

(con sustantivos en sentido genérico): me encanta la ópera I love opera; odio el pescado I hate fish; así es la vida that’s life;
(nosotros) los mexicanos lo sabemos muy bien we Mexicans know only too well; ¿ya vas a la escuela? do you go to school
yet?; ya salió del hospital she’s out of the hospital (AmE) o (BrE) out of hospital; en el mar at sea; viajar por el espacio to
travel in space

But I don't think that applies where you want something - quiero agua - I want some water.

PS "te quiero agua" means "I love you, water" !!

Yes its a gender thing.
If words that end in "a", they are preceded by the word la.
If words that end in everything else are preceded by the word el.
This isn't the case for every single word, but it would take me way too long to explain it.

It doesn't matter if it's a food group, just the gender of the word.
